Coastal. Sand. Wind. It grows where nothing else wants to.

Silver leaves. Hard branches. Dense clusters of orange berries. Thorns make harvesting slow. The fruit holds tight.

Late August to October. Best after first frost. Acid drops slightly. Still sharp.

Taste is high acid. Direct. Citrus-led. Under it: apricot, light tropical. Raw is too aggressive. Needs control.

Use

Juice for sauce or vinaigrette
Purée for sorbet or gel
Ferment for softer acidity
Freeze before use
Dry for powder

Control

Fat rounds it
Cream, butter, fatty fish

Sugar reduces sharpness
Use carefully

Fermentation adds depth

Dilution is often required

Choose one direction.

Fat → cream, butter, mackerel
Earth → celeriac, beetroot
Fruit → apricot

Do not mix directions.
